Ingredients
- 7000 g - 70% Flour
- 3000 g - 30% Vitason Multi 10
- 300 g - 3% Fresh Yeast
- 150 g - 1,5% Salt
- 5800 g - 58% Water approx.
Decoration:
- mixture of seeds
Working method
- Mix all ingredients into a smooth and well developed dough
- Dough temperature: approx. 27°C
- Scale: Dough pieces of approx. 500 grams and rounding
- Dough proof: Approx. 45 minutes
- Mould as a long loaf. Place the dough pieces on with rice flour prepared inserters or baking sheets
- Final proof: Approx. 60 minutes
- Baking: approx. 35 minuten at 230ºC
