Ingredients

  • 7000 g - 70% Flour
  • 3000 g - 30% Vitason Multi 10 30%
  • 300 g - 3% Fresh Yeast
  • 5700 g - 57% Water approx.

Decoration:

  • 1000 g - 10% (Mixture of ) Seeds

Working method

  • Mix all ingredients into a smooth and wel developed dough
  • Dough temperature: approx. 27ºC
  • Bulk proof: Approx. 15 minutes
  • Scale: Dough pieces approx. 500 grams and rounding
  • Dough proof: Approx. 20 minutes
  • Mould as a long loaf If desired decorate with (a mixture of) seeds Place the dough pieces on with rice flower prepared inserter or baking sheets
  • Final proof: Approx. 60 minutes
  • Just before baking incise as desired
  • Baking: Approx. 35 minutes at 230ºC
