Ingredients

  • 10000 g - 100% Flour
  • 400 g - 4% Sugar
  • 300 g - 3% Sonplus Spray
  • 150 g - 1.5% Salt
  • 80-100 g - 0.8-1% Dry Yeast
  • 35 g - 0.35% Sonplus Toast Export
  • 5500 g - 55% Water approx.

Working method

  • Mix all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 27ºC
  • Dough proof: Approx. 5-10 minutes
  • Scale: Dough pieces approx. 800 grams and rounding
  • Mould as a long loaf Place the dough pieces into baking tinstin bread
  • Final proof: Approx. 70-80 minutes
  • Baking: approx. 30 minutes at 230ºC
