Ingredients

  • 10000 g - 100% Flour ( High - Protein)
  • 180 g - 1.8% Salt
  • 500 g - 5% Yeast
  • 1200 g - 12% Proson Luxe au Beurre
  • 300 g - 3% Proson Vruchten Citrus (fruit citrus)
  • 5500 g - 55% Water Approx.

Working method

  • Mix all ingredients into a well developed dough
  • Dough temperature: approx. 26°C
  • Scale: approx. 1000 grams for 30 pieces
  • Bowl proof: Approx. 10-15 minutes
  • Divide and rounding up
  • Final proof: Approx. 70 minutes
  • Baking: approx. 7 minutes at 260-270°C
