Ingredients

  • 5000 g - 50% Flour
  • 5000 g -50% Vitason Donker Meergranen (multigrain dark) 50%
  • 1000 g -10 % Sonplus Luxe (Luxury)
  • 600 g -6% Fresh Yeast
  • 5500 g - 55% Water approx.

Working method

  • Knead all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 26ºC
  • Scale 1650 gram (30 pieces)
  • Dough rest: Approx. 10 minutes
  • Final proof: Approx. 75 minutes
  • Baking: Approx. 9 minutes at 260ºC
  • Divide and round up. Place the doughpieces on the bakingsheet
  • Decorate as desired
