Soft Irish Rolls
Ingredients
- 10000 g - 100% Flour
- 1300 g -13% Sonplus Luxe (Luxury)
- 500 g - 5% Fresh Yeast
- 200 g - 2% Proson Bruin Royal (brown)
- 150 g - 1.5% Salt
- 5400 g - 54% Water approx.
- 1000 g - 10% Granary
- 1000 g -10% Water to soak the Granary
Working method
- Soak the Granery for 30 minutes with lukewarm water
- Mix all ingredients into a smooth and well developed dough
- Dough temperature: Approx. 27ºC
- Scale: Approx. 1600 gram (30 pieces)
- Dough proof: Approx. 15 minutes
- Final proof: Approx. 80 minutes
- Baking: approx. 9 minutes at 250ºC
- Divide and round up After approx. 5 minutes mould the dough pieces into a roll Place the rolls on baking sheets
