Soft Irish Rolls

Ingredients

  • 10000 g - 100% Flour
  • 1300 g -13% Sonplus Luxe (Luxury)
  • 500 g - 5% Fresh Yeast
  • 200 g - 2% Proson Bruin Royal (brown)
  • 150 g - 1.5% Salt
  • 5400 g - 54% Water approx.
  • 1000 g - 10% Granary
  • 1000 g -10% Water to soak the Granary

Working method

  • Soak the Granery for 30 minutes with lukewarm water
  • Mix all ingredients into a smooth and well developed dough
  • Dough temperature: Approx. 27ºC
  • Scale: Approx. 1600 gram (30 pieces)
  • Dough proof: Approx. 15 minutes
  • Final proof: Approx. 80 minutes
  • Baking: approx. 9 minutes at 250ºC
  • Divide and round up After approx. 5 minutes mould the dough pieces into a roll Place the rolls on baking sheets
