- 300 g - 3% Crème Sonnomel
- 500 g - 5% Fresh Yeast
- 150 g - 1.5% Salt
- 6000 g - 60% Water approx.
Working method
- Knead all ingredients into a smooth and well developed dough
- Dough temperature: approx. 26ºC
- Scale: approx. 1600 gram (30 pieces)
- Divide and round up. Place the dough pieces on the baking sheets
- Final proof: Approx. 90 minutes
- Baking: Approx. 9 minutes at 260ºC
- Dough rest: Approx. 10 minutes
