Sonnibatta's Chives - CreationS Sunflower and Proson Krokant Malt (crusty malt)

Ingredients

  • 6000 g - 60% Flour
  • 4000 g - 40% CreationS Sunflower
  • 200 g - 2% Fresh Yeast
  • 150 g - 1.5% Salt
  • 100 g - 1% Proson Krokant Malt (crusty malt)
  • 50 g - 0.5 % Dried chives
  • 400 g - 4 % Olive oil
  • 6300 g - 63% Water approx.

Decoration:

  • 300 g - 3% Rye Flour

Working method

  • Mix all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 27ºC
  • Scale: approx. 1650 gram (30 pieces)and rounding
  • Dough proof: Approx. 15 minutes
  • Only decorate with sunflower seeds on the bottom and sprinkle with rye flour on the top. It is also possible to lightly sprinkle with caraway seed after placing it on the plate
  • Baking: Approx. 15 minutes at 230ºC with steam
  • Bulk proof: Approx. 90 minutes
  • Just divide, don't round up
