Ingredients

  • 10000 g – 100% SONBRO SPELT LICHT
  • 1000 g – 10% QS ZACHT LUXE
  • 600 g – 6% Fresh Yeast
  • 4700 g – 47% Water approx.

Working method

  • Mix all ingredients into a smooth and well developped dough. Mix 8 minutes in low speed, knead 1 minute in high speed.
  • Dough temperature approx. 26°C.
  • Scale dough pieces approx. 1800 grams (30 pieces) and rounding.
  • Dough rest approx. 5 minutes.
  • Divide, round up, decorate and place on baking slides.
  • Final proof approx. 70 minutes.
  • Baking approx. 9 minutes at 240°C.
