  • 10000 g - 100% Vitason Spelt
  • 1000 g - 10% QS Zacht Luxe (Luxury Soft Rolls)
  • 600 g - 6% Fresh Yeast
  • 4000 g - 40% Water approx.

Working method

  • Mix all ingredients into a smooth and well developed dough
  • Dough proof: approx. 5 mins
  • Scale: Approx. 1650 grams for 30 pieces
  • Divide, round up and place on baking sheets
  • Dough temperature: Approx. 26ºC
  • Final proof: Approx. 70 minutes
  • Baking: approx. 9 minutes at 240ºC
