- 5000 g - 50% Vitason Zonnepit (sunflowerseed) 50%
- 4600 g - 46 % Water approx.
Working method
- Knead all ingredients into a smooth and well developed dough
- Dough temperature: approx. 26ºC
- Scale: Approx. 450 gram
- Dough proof: Approx. 35 minutes
- Shape as a pointed model and decorate with sunflower seeds
- Final proof: Approx. 60 minutes and cut once before baking
- Baking: approx. 35 minutes at 230ºC, with steam
- Baking in rotation oven: Approx. 35 minutes at 210ºC
