  • 5000 g - 50% Vitason Zonnepit (sunflowerseed) 50%
  • 4600 g - 46 % Water approx.

Working method

  • Knead all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 26ºC
  • Scale: Approx. 450 gram
  • Dough proof: Approx. 35 minutes
  • Shape as a pointed model and decorate with sunflower seeds
  • Final proof: Approx. 60 minutes and cut once before baking
  • Baking: approx. 35 minutes at 230ºC, with steam
  • Baking in rotation oven: Approx. 35 minutes at 210ºC
