Vitason Multigrain Light Loaf
Ingredients
- 5000 g - 50% Flour
- 5000 g - 50% Vitason Licht Meergranen (multigrain light) 50%
- 5500 g - 55% Water ca.
Working method
- Mix all ingredients into a smooth and well developed dough
- Dough temperature: approx. 26-28ºC
- Scale: Dough pieces approx. 455 grams and rounding
- Dough proof: Approx. 15 minutes
- Mould as a short loaf Decorate with a mix of maize grits and sesame seeds (50:50) Place the dough pieces on a with rice flour prepared inserter or baking sheets
- Final proof: Ca. 75 minutes
- Baking: approx. 35 minutes at 230ºC with steam
