Vitason Multigrain Light Loaf

Ingredients

  • 5000 g - 50% Flour
  • 5000 g - 50% Vitason Licht Meergranen (multigrain light) 50%
  • 5500 g - 55% Water ca.

Working method

  • Mix all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 26-28ºC
  • Scale: Dough pieces approx. 455 grams and rounding
  • Dough proof: Approx. 15 minutes
  • Mould as a short loaf Decorate with a mix of maize grits and sesame seeds (50:50) Place the dough pieces on a with rice flour prepared inserter or baking sheets
  • Final proof: Ca. 75 minutes
  • Baking: approx. 35 minutes at 230ºC with steam
