Ingredients
- 10000 g – 100% Flour
- 200 g – 2% Fresh Yeast
- 136 g – 1,36% Salt
- 100 g – 1% FermenSon Duo
- 100 g – 1% Sonextra Shortening Clean Label
- 6200 g – 62% Water approx.
Working method
- Knead all ingredients into a smooth and well developed dough
- Dough temperature approx. 27°C
- Scale dough pieces approx. 910 grams and rounding
- Dough proof approx. 5-10 minutes
- Mould as a long loaf, place the dough pieces into toast baking tins
- Final proof approx. 60-70 minutes
- Baking approx. 30 minutes at 230°C
