Focaccia (Italian Plate Bread)
Ingredients
- 10000 g - 100% Flour
 - 200 g - 2% Fresh Yeast
 - 200 g - 2% Sonplus Krokant Extra (Crispy)
 - 150 g - 1.5% Salt
 - 300 g - 3% Rosemary
 - 100 g - 1% Oregano
 - 300 g - 3% Olive Oil
 - 5700 g - 57% Water approx.
 
Working method
- Mix all ingredients into a smooth and well developed dough
 - Dough temperature: approx. 26ºC
 - Depending on the baking sheet size
 - Dough proof: Approx. 15 minutes
 - Final proof: total approx. 50 minutes. After approx. 10 minutes prick the slice with your fingers
 - Just before baking sprinkle the dough with some rosemary
 - Baking: approx. 25 minutes at 240ºC with a bit steam
 - Roll the dough pieces to a slice with a thickness between 2 an 3 cm and which fits on the baking sheet
