Crispy Sunflowerseed Rolls

Ingredients

Flour 50% 5000 g
Vitason Zonnepit (sunflowerseed) 50% » 50% 5000 g
Fresh Yeast 4% 400 g
Sonplus Krokant Extra (Crispy) » 3% 300 g
Water approx. 45% 4500 g
Decoration:
Sunflower seeds % g
Rye Flour % g
Working method
Kneading Mix all ingredients into a smooth and well developed dough
Dough temperature Approx. 26ºC
Scale Approx. 1650 gram (30 pieces)
Dough proof Approx. 15 minutes
Dividing Make a round slice of the dough pieces. Decorate with sunflower seeds on the bottom and sprinkle with rye flour on the top of the slice. Divide and round up. Place the dough pieces on baking sheets. It is possible to sprinkle lightly with Caraway seeds
Final proof Approx. 60 minutes
Baking Approx. 15 minutes at 230ºC with steam
