Focaccia (Italian Plate Bread)

Ingredients

  • 10000 g - 100% Flour
  • 200 g - 2% Fresh Yeast
  • 200 g - 2% Sonplus Krokant Extra (Crispy)
  • 150 g - 1.5% Salt
  • 300 g - 3% Rosemary
  • 100 g - 1% Oregano
  • 300 g - 3% Olive Oil
  • 5700 g - 57% Water approx.

Working method

  • Mix all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 26ºC
  • Depending on the baking sheet size
  • Dough proof: Approx. 15 minutes
  • Final proof: total approx. 50 minutes. After approx. 10 minutes prick the slice with your fingers
  • Just before baking sprinkle the dough with some rosemary
  • Baking: approx. 25 minutes at 240ºC with a bit steam
  • Roll the dough pieces to a slice with a thickness between 2 an 3 cm and which fits on the baking sheet
