Black Vegan Brioche Hamburger Buns
Ingredients
- 10000 g - 100% Flour (high protein)
- 600 g - 6% Fresh Yeast
- 500 g - 5% Sonplus CL
- 500 g - 5% Sonextra Shortening Clean Label
- 300 g - 3% Sugar
- 150 g - 1.5% Salt
- 100 g - 1% Malsextra Poeder (softness powder)
- 5400 g -54% Water approx.
Decoration::
- Black sesame seeds
Hamburgers::
- Made from NaTurLi Vegan (vegetable minced meat)
Working method
- Kneed all ingredients into a smooth and well developed dough.
- Dough temperature: approx. 26°C.
- Scale: approx. 1800 grams (30 pieces) and rounding
- Dough proof: Approx. 10 minutes
- Divide and rounding. Place dough pieces on baking slides an decorate with black sesame seeds.
- Final proof: Approx. 75 minutes
- Baking: approx. 8 minutes at 250°C.
- Slice the hamburger buns horizontal. Decorate the buns with enough vegatables, fried vegan hamburgers and vegan sauce.
