Black Vegan Brioche Hamburger Buns

Ingredients

  • 10000 g - 100% Flour (high protein)
  • 600 g - 6% Fresh Yeast
  • 500 g - 5% Sonplus CL
  • 500 g - 5% Sonextra Shortening Clean Label
  • 300 g - 3% Sugar
  • 150 g - 1.5% Salt
  • 100 g - 1% Malsextra Poeder (softness powder)
  • 5400 g -54% Water approx.

Decoration::

  • Black sesame seeds

Hamburgers::

  • Made from NaTurLi Vegan (vegetable minced meat)

Working method

  • Kneed all ingredients into a smooth and well developed dough.
  • Dough temperature: approx. 26°C.
  • Scale: approx. 1800 grams (30 pieces) and rounding
  • Dough proof: Approx. 10 minutes
  • Divide and rounding. Place dough pieces on baking slides an decorate with black sesame seeds.
  • Final proof: Approx. 75 minutes
  • Baking: approx. 8 minutes at 250°C.
  • Slice the hamburger buns horizontal. Decorate the buns with enough vegatables, fried vegan hamburgers and vegan sauce.
