Crispy Champions Rolls

Ingredients

  • 5000 g - 50% Flour
  • 5000 g - 50% Vitason Licht Meergranen (multigrain light) 50%
  • 400 g - 4% Fresh Yeast
  • 300 g - 3% Sonplus Krokant Extra (Crispy)
  • 5700 g - 57% Water approx.

Decoration::

  • 200 g - 2% Sunflower Seeds approx.
  • 100 g - 1% Poppy Seed approx.
  • 100 g - 1% Sesame Seed approx.

Working method

  • Mix all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 26ºC
  • Scale: approx. 1800 gram (30 pieces)
  • Dough proof: Approx. 15 minutes
  • Flatten the dough pieces Moisten bottom and upper side Press the bottom side into sunflower seeds, press the upper side into a mixture of sesame and poppy seeds Divide but do not round up Place the dough pieces on baking sheets
  • Final proof: Approx. 70 minutes
  • Baking: approx. 18 minutes at 230ºC with steam
