Crispy Dark Multigrain Rolls
Ingredients
- 5000 g - 50% Flour
- 5000 g - 50% Vitason Donker Meergranen (multigrain dark) 50%
- 400 g - 4% Fresh Yeast
- 300 g - 3% Sonplus Krokant Extra (Crispy)
- 5500 g - 55% Water approx.

- Sonvlokken
Working method
- Mix all ingredients into a smooth and well developed dough
- Dough temperature: approx. 26ºC
- Scale: approx. 1800 gram (30 pieces)
- Dough proof: Approx. 10 minutes
- Final proof: Approx. 60 minutes
- Baking: Approx. 18 minutes at 230ºC with steam
- Divide and round up. Eventual decorate with Sonvlokken and place the dough pieces on baking sheets
