Ingredients
- 7500 g - 75% Flour
 - 300 g - 3% Sonplus Krokant Extra (Crispy)
 - 150 g - 1.5% Salt
 - 5800 g - 58% Water approx.
 
Decoration:
- 500 g - 5% Rye Flour
 
Working method
- Mix all ingredients into a smooth and well developed dough
 - Dough temperature: approx. 26ºC
 - Scale: Dough pieces approx. 450 grams and rounding
 - Dough proof: Approx. 40 minutes
 - Mould as a short loaf Place the dough pieces on an with rice flour prepared inserter or baking sheets
 - Just before baking sprinkle with rye flour and incise as desired
 - Final proof: Approx. 65 minutes
 - Baking: Approx. 35 minutes at 230ºC with steam
