White Sourdough Bloomer

Ingredients

  • 10000 g - 100% Flour
  • 500 g - 5% Rye flour
  • 400 g - 4% Proson Sarrasin
  • 300 g - 3% Crème Supersoft
  • 200 g - 2% Fresh Yeast
  • 150 g - 1.5% Salt
  • 5500 g - 55% Water approx.

Decoration:

  • Rye flour

Working method

  • Knead all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 27 ºC
  • Scale: Dough pieces approx. 720 gram and rounding
  • Dough proof: Approx. 25 minutes
  • Shape as a long loaf. Place the dough pieces on the inserter
  • Final proof: Approx. 70-80 minutes
  • Put into the oven with steam with temperature around 230ºC and then at 210ºC around 35 minutes
