White Sourdough Bloomer
Ingredients
- 10000 g - 100% Flour
- 500 g - 5% Rye flour
- 400 g - 4% Proson Sarrasin
- 300 g - 3% Crème Supersoft
- 200 g - 2% Fresh Yeast
- 150 g - 1.5% Salt
- 5500 g - 55% Water approx.
Decoration:
- Rye flour
Working method
- Knead all ingredients into a smooth and well developed dough
- Dough temperature: approx. 27 ºC
- Scale: Dough pieces approx. 720 gram and rounding
- Dough proof: Approx. 25 minutes
- Shape as a long loaf. Place the dough pieces on the inserter
- Final proof: Approx. 70-80 minutes
- Put into the oven with steam with temperature around 230ºC and then at 210ºC around 35 minutes
