Ingredients

  • 320 g - 2% FermenSon Prestige
  • 160 g - 1% Sonextra Shortening CL
  • 9920 g - 62% Water approx.

Working method

  • Knead all ingredients into a smooth and well developed dough
  • Dough temperature: approx. 27ºC
  • Scale: Dough pieces approx. 910 grams and rounding
  • Dough proof: Approx. 5 minutes
  • Mould as a long loaf. Place the dough pieces into toast baking tins
  • Final proof: Approx. 60-70 minutes
  • Baking: Approx. 30 minutes at 230°C
