- 400 g - 4% FermenSon Prestige
- 300 g - 3% Sugar
- 200 g - 2% Gluten powder
- 100 g - 1% Full milkpowder
- 100 g - 1% Sonextra Shortening CL
- 95 g - 0,95% Salt
- 5.500 g - 55% Water approx.
Working method
- Knead all ingredients into a smooth and well developed dough.
- Dough temperature: approx. 27°C.
- Scale: approx. 1.650 grams (30 pieces) and rounding.
- Dough proof: approx. 10 minutes.
- Divide and round up and place dough pieces on baking sheets.
- Final proof: approx. 70 minutes.
- Bake: approx. 10 minutes at 260°C.
